Here’s another one from “Cathy’s Creations”:

Green Pepper Stir Fry Steak

  1. You will need: 1 or 2 tender steaks ie: striploin, inside round and cut into cubes or stripes depending on what you like.
  2. 1/2 ro 1 Medium Green Pepper depending on amount of Steak, cut into cubes or strips
  3. 1/2 to 1 Medium Red Pepper  also cut into cubes or strips
  4. 3 toes Fresh Garlic, diced
  5. 1 Tbsp. Frying oil, (Canola works for me)
  6. Salt & Pepper to taste
  7. 2 Tbsp. Kraft B-B-Q sauce
  8. pinch of cornstarch (dependant on amount of moisture in pan.)

Take the oil, and place in deep frying pan, warm and then place steak strips and fry till juice is clear, add Green and Red Pepper, and Fresh Garlic, fry till aldente, take the B-B-Q sauce and spread over mixture, and cornstarch to thicken and make a glaze.  Place lid on pan, and turn off heat.

Spanish Rice

1. Large can (approx. 800 ml ) of Diced tomatoes with Herbs and Spices

1/2 cup of water

2 Cups  of instant rice.

Empty can of tomatoes in large saucepan, and rinse with water, adding to the tomatoes in saucepan, bring to low simmer and add rice.  Let simmer, and stir frequently to prevent sticking or burning to the bottom.  Once all the moisture is absorbed into the rice, it is done, and you can serve.

I’m posting a pic, a little hazy but you’ll get the idea!  I like the colour in this one!

What can I say, but Wow, Well done!

My ticket in hand, I parked underground so I could leave my parka in the car.  Dressed in a nice skirt and blouse, I ambled my way to the concert hall and my 3rd Balcony seat.  Being on a strict budget requires one to sit in the “cheap seats”.

I approached the row, in the 3rd Balcony and it was row 1!  Yikes!  ME NO LIKE HEIGHTS!  Especially, when one can see over the edge, and peer over the lower crowd.

I asked the usher if the show was sold out, and asked if I could move to the top row, at least with a bit of (somewhat) solid looking floor between me and the edge it’s at least a little more easy to tolerate.

The Usher mentioned if someone claims the seat I’d have to move, but, in waiting to see if someone would come I thought I’d offer my previously assigned seat for this one.  No one came.

The only downer was when some people came in after the performance had started and interupted my view.  What happened to the days when the late comers were not allowed in and had to wait around the corner as to not interupt the show.

Alas, courtesy is sure lacking in today’s society.  I really enjoyed seeing the little girls in their party dresses, one even had dinner gloves on, and another a fake tiara, another holding a velveteen beautiful red rose.

The show was well done, and I liked how they gave the characters a sense of humour, little things like Mr. le Fou, falling and stumbling, and little analogies here and there.

The show started at 1:30, and with a brief intermission.  I was back at my car by about 4:30.  Well worth the price tag!

Next adventure, is the most anticipated in February in the tiny sleepy suburb of St. Boniface.

Festival du Voyageur!  YUM!  Maple Syrup, Sugar Pie, Tourtiere, Poutine, and awesome music!  Hope to see you there!

Hello, ma Chère,

I was thinking of you the other day.  I know how you like to try new recipies.

I made a really neat casserole the other day you may want to try.

Lazy Cabbage Rolls.

I started with browning 2 lbs, of extra lean hamburger, sautéing till transulant 1 large onion, in the meantime washing and prepping cabbage, by removing outer tough leaves, and then taking the rest, and removing the rib, leaving pieces.  Place in a side bowl.

Meanwhile, while waiting for hamburger to brown, and onion to cook, take a large dutch oven pot, open 1 large can of whole tomatoes, place in pot, mash, open 1 large can of spagetti sauce, and stir, by now hamburger and onion should be done, drain and add to tomatoe mixture, bring to a soft boil, add dry parmesan cheese to thicken.

Take a large oven roaster line with 1 layer of “oven ready” lasagna noodles, layer of cabbage leaves, and 1/2 of tomatoe sauce, and repeat.

Cover with aluminum foil and roaster cover.  Bake at 300 F, for about 1 hour.

After ordering my ticket for the “Beauty and the Beast musical”  It seemed like a life-time ago.

Finally, this coming Sunday I am going to reap the reward of waiting.  I am anxious and excited.  Hoping it’s easy to find a parking spot.

A difficult decision

Well, after fighting what seemed to be a loosing battle with the diabeties in Nermal, for a month.

We went to the vet to try one more thing.  Results were not good!  Yesterday evening I came to the decision that if the results were not good, that I’d have to say goodbye.

So, as I feared the results were not good, so I brought her home for a couple of days for a “final” cuddle, treat, and goodbye.   We are going to try one more thing this weekend, and if still not successful, we are going to part ways.

The battle was hard fought, but, it’s not worth it to me to make her suffer more if the results don’t improve Monday.

Turmoil, Tension, Turmultous Times

This is my “theme song” this past couple of days.  Grandma has been having troubles with her heartbeat, finding it hard to walk, or exert herself too much.

She went to the Family Dr.  Had a Cardiology report done that her heart isn’t beating properly,  and was placed on a waiting list for a caridologist.

Saturday, she felt faint at Church and so the ambulance was called to take her to the hospital as this is what the Dr. recommended.

They admitted her, as she passed out in the E.R., and will not be released because of the fainting/passing out worry, and the fact she lives alone.

So, now the waiting game of getting her in for the Cardioligist to do a Pacemaker surgery, and then recovery time etc.

The poor thing isn’t very patient, so must be fun for the Aides and Nurses up there.

But, for the moment she is in the best place possible.

Cours Français

Dans une semaine, je vais commencer un cours pour le français oral.  In one week I’ll be starting a Oral French course at the Universitaire St. Boniface.  I’m a little nervous, as to what to expect, how big the class size will be and what exactly we will all learn.  Hope there isn’t a test, I get tongue tied when I’m nervous!

Faut que j’annul les cours parceque j’ai pas assez l’argent.  Mais je vais verifyier si il y a un cours disponible au bibliotheque pour imprenter.

Poor Nermal!  We had to arrange to go to the Vet this week.  I was getting quite concerned as to the fact she’s been losing a lot of weight lately, drinking more and eating more, but still loosing weight.  Oh dear, I thought to myself (being the Nurse’s Aide) I am.  The poor thing is showing signs of diabeties.  And yes, after what seemed a torturous time for her at the Vet.  Being poked and proded, and the meowing, screaming, scratching.  The Vet said she has diabeties.

Yesterday I had to learn how to give a needle of insulin to the poor thing.  The tip of the syringe is so fine I don’t know if I’m doing it right.  Tempted to hide her dosage with moist food as when the needle goes in, poor Nermal yelps.

I hope eventually she will get used to it, and will just be another part of our routine.  Had to change her food to something else.

It’s a bit expensive, but, I hate to put her down.  As she is such a nice and cuddly cat.  Loves affection and pets, purrs like crazy.

Wow!  How time flies!  20 years ago, I just 1st arrived into Winnipeg about a year, and felt “called” to a Religious Order.  So, I had an intensive French immersion course, so I could join this Order., as it is located near Quebec City.

Today, 20 years ago I would have been in transit heading towards this location.  I left Winnipeg by Greyhound bus, and travelled 2 nights, and 2 days (never again) I swore.  But, thought if I was to take a vow of “poverty” this was the way to travel.

I arrived the following morning early, and a Sister came to pick me up and generously took me to the Noviciate of the Nunery.  The Maitress de Novice (Novice Mistress) let me rest until the 13th of December, as their was another girl coming to join and we both could start our engagements on the 13th of December.

Settling into the routine reasonably fast, the early (5:30) mornings were a challenge, and by the time lights out came at 9:30 trust me I was happy to get to bed!

I had to be up so early as my responsibilties entailed the Refectory (dining hall) and preparation of Breakfast.  Then onto the Morning Religious Offices, Mass, finally Breakfast, and the rest of the daily routine.

I found it enjoyable, and a challenge being away from friends and family for so long and far.

Come early February, there was some activities with the group of which some of the Winnipeg Friends came to participate.  Including My Grandmother.  So the Novice Mistress called us into the office and she told me that “This isn’t your place.”  Gave me a couple of very lame reasons, and I was sent home back to Winnipeg.

So, I was crying, I felt happy there.  Didn’t understand why, but, came home to Winnipeg, and then tried looking for work, and found menial jobs.  Eventually taking “training” as A Home Care Aide, and then the rest they say is “history”.

But, reflecting back, it seems just like yesterday.
